Light, fluffy and fruity, these pancakes will be a Pancake Day hit for all the family to enjoy!

Blueberry Pancakes

Ingredients:

  • 250ml (1 cup) buttermilk
  • 1 egg, lightly beaten
  • 1 tbsp melted butter
  • 1 tsp natural vanilla extract
  • 115g (3/4 cup) plain (all-purpose) flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 ripe bananas mashed
  • 100g (31/2oz) blueberries
  • 1 tsp vegetable oil maple syrup to serve.

 

Method:

 

Put the buttermilk, egg, butter and vanilla essence in a bowl and whisk together. Sift in the flour, baking powder and salt, then stir, making sure not to over blend as the batter should be lumpy. Add the fruit.

Heat the oil in a frying pan over medium heat. Add 60ml (1/4 cup) of batter to the pan for each pancake. Cook for 3 minutes, or until the pancakes are golden brown on the bottom.

Turn over and cook for 1 minute more. Repeat with the rest of the batter, keeping the cooked pancakes warm. serve immediately, drizzled with maple syrup.
